I have an f15o prerunner, and my my stock throttle cable is really stiff, and doesnt work good. It is really hard to push, and it get stuck open a little bit. Anyone running a cnc pedal with a stock cab, Or do they have to be mounted on a flat surface? what are my throttle cable options?

Why not just replace with OEM parts? Your cable is probably worn or damaged...

The truck was originally efi, and is now carbed... so the cable is way to long now.. should i still just replace it with a stock one? or go with a cnc pedal or something?

Order a cable for an 80-85 truck... they have the same pedal and used carbs. A CNC pedal isn't going to make you faster.

Have a custom cable made.... and just use your stock pedal. I've made them before for custom apps.
