I am looking for adjustable shelfs or hooks to hang items on the walls of an enclosed trailer. I need the verticle mounts to bolt to the walls and have provisions for the hooks/shelves to move up and down the walls. I want clean quality stuff and I will put some mounts on the outside for use when it is parked. I haven't found what I want but I know someone makes it.

After owning several race trailers shelves are not a good option unless they are in a cabinet. Every trailer has it's own different ride quality and if you have a shelf chances are that you hit a big bump stuff will bounce off of your shelf.
My opinion is get some C-Tech or Arrow components cabinets if money allows it. If not I have seen cabinets from Home Depot installed too. Just remember that if you have to make an evasive manuver things will move. I have learned over the years I've had cars come loose, tool boxes move and fall and other bad things happen. If you tow in my eyes cabinets are safer for your vehicle and your stuf that you are carrying.
Good luck and remember there are places like Mac's on the web for tie downs and other holding devices.
